On Wednesdays we wear pink (yes I realize it’s Thursday!) and on weekends after Valentine’s day we eat Pink Pancakes! (Bc who really has their act together to make special pancakes on a weekday morning?)

I used @simplemills Almond Flour based Pancake and Waffle mix with an extra boost of nutrition from beets! Beets get their beautiful rich purple color from betalain, a phytochemical chock full of antioxidants. Beets are also rich in nitrates which support healthy blood flow, which is good news for basically every part of your body.

Pink Pancakes Recipe:

1. Take 1 and 1/2 cups of your favorite pancake mix (or use your favorite homemade pancake recipe) I love love love love love (can you tell I love?) @simplemills which calls for 3 eggs, 3tbp milk or water and 2tbsp coconut or vegetable oil.

2.1 beet, baked and then pureed…or you can use 1/2 can of drained canned beets.

3.Combine everything and prepare on a skillet, top with ricotta, your favorite butter or syrup :)

4.Makes 12 small pancakes or 6 large pancakes.
